Chocolate custard

This is the easiest custard recipe.

Heat 1 pint milk in the microwave to steaming. Whisk 1 large Elsa’s Organic Duck Egg (double yolkers are great to use) with 3 tbsp plain flour, 3 tbsp castor sugar and half tsp vanilla essence. Continue whisking as you pour in the hot milk. Tip in 20z chocolate drops or squares of chocolate broken up. Heat in microwave for 4 minutes whisking after each minute until custard is thick and creamy.

Serve hot with bananas or use cold in a luxury trifle. If you are boring and want plain custard omit the choc drops.

back from school

hi back from school time for work i have to feed my lambs freda + freddy now. oh guess what i had for breakfast??duck egg omelette (spelling?)
Multi culture week at school, did you know Hawai’s governor has it’s own flag, i wonder if he eats duck eggs?

Hello from Devon


I’m Elsa and look after lots of Organic egg laying ducks in Devon. This blog will let you know all about what is happening on our farm and just how our egg sales are going. I’m off to bed, but Dad is going to pack eggs for delivery to waitrose tomorrow, it’s always good to get someone else to do the work!
