Easy Devon Apple cake
225g self raising flour
1 tsp baking powder
225g castor sugar
150g butter melted
350g apples peeled and sliced (windfalls will do)
25g Flaked almonds
- grease 20cm loose-bottomed cake tin.
- mix flour, baking powder, sugar, eggs and melted butter.Spread half mixture in tin.Thickly slice apples mixture piling mostly in the middle.
- put remaining mixture over apples.
- Sprinkle with almonds.
- cook in preheated oven 170 degree 45 minutes until golden and shrinking away from side of tin.
- Dust with icing sugar and serve warm with cream.

mmmmmm, wonder how many eggs? Was about to make it…………I’ll guess at 2 (having checked out some other recipes!!) and see how it works out. Afraid its organic hen eggs for me!

Just tasted it (overnight cooling as was quite soft on coming out! Think the amount of apples perhaps makes it squidgy in the middle. But yum yum!! I also think I would cut back the sugar, on a personal preference taste thing. Did the same with a crumble last week for a dinner party and got great reviews!! Move over, Jamie et al…..
I’m afraid its a eat with a fork type cake especially good with a large dollop of cream. Adjust the sugar if you have sweeter apples ours are quite tart cookers and the kids have a sweet tooth! It’s a good way to get Percy to eat fruit!
